It’s so easy and SO good! Looking forward to giving this recipe a try. My grocery store didn’t have the Gochujang, sauce but I topped it off with Sriracha instead…though I really think the dish didn’t even need Sriracha because the sauce mix is absolutely wonderful. Also couldn’t find Gochujan, so I mixed some sriracha and sweet and sour sauce instead. This is fantastic. This is my new favorite recipe! It seems soooo nice. Made this tonight and my husband and I enjoyed very much. . We used a mandolin to thinly slice the cucumbers and they were crisp and fresh paired with the meat and rice. Will be trying with vegetarian ground beef in the future for my vegetarian friends. We will definitely be adding this to the rotation. Not sure what happened. I also didn’t have fresh ginger, so I used 1/4 teaspoon ground ginger. The only change I made was to slightly pickle the cucumber slices in water, rice vinegar and 1/2 tsp granulated sugar. Yum! I've also considered making lettuce wraps with this and also making using a egg roll style bowl instead of the rice. And as we all know, these calorie counts and nutritional information is not an exact science.
